If the art of distillation was brought from Ireland over the Giant’s
Causeway, it must have arrived on Mull. The island’s sole current
distillery is in the harbor village of Tobermory. The village was once
known as Ledaig (“Safe Haven”, in Gaelic). The distillery traces its
origins to 1795, but has a much interrupted history and many owners. The
proprietors during the period 1972-75 made some particularly fine whisky.
Various owners have at times used the name Tobermory on a blend and a
vatted malt, but it now appears on a clearly labeled single malt, produced
after the distillery reopened in 1989-90. This version has a peatiness,
albeit light, derived entirely from the water. The barley malt is not
peated. The name Ledaig has, for some years, been used for older versions
of the whisky employing peated malt. Ledaig is now being made again, and
its peatiness gradually being increased. A 2-year-old sampled as a work
in progress in 1999 had a grassy start followed by a surge of smoky
peatiness.
The maritime character of the whiskies was diminished when the warehouses
were sold by previous owners to make room for apartments. The whisky is
now matured on the mainland by the current proprietors, Burn Stewart, at
their Deanston distillery.
