SCAPA DISTILLERY

In a low-key way, this is quite a cult whisky, despite somewhat intermittent production.  Although the distillery has a functional appearance (despite a restored water wheel), its evocative location helps.  Scapa Flow, a stretch of water linking the North Sea to the Atlantic, is famous for its roles in both World Wars.  The distillery, near Kirkwall, fails to be the northernmost in Scotland by only half a mile.  It was founded in 1885.  Two of the original warehouses survive, but most of the present fabric dates from 1959.

The water supply, from a stream called the Lingro Burn, is very peaty, but the distillery uses wholly unpeated malt.  It has a Lomond wash-still, which may contribute to a slight oiliness of the whisky.  Maturation is in Bourbon casks.  Although the whisky is quite light in flavor, it has a distinctive complex of vanilla notes, sometimes suggesting very spicy chocolate, and nutty, rooty saltiness.  It has at times been bottled under the name of Allied’s subsidiary Taylor and Ferguson. The distillery is now managed by Highland Park.
