ISLE OF JURA DISTILLERY

In the Inner Hebrides, close to Islay, lies the Isle of Jura.  The malt distillery seems to have been founded around 1810, and was rebuilt in 1876.  Although a couple of buildings dating back to its early days are still in use, the present distillery was built during the late 1950s and early 1960s, and enlarged in the 1970s.  It was owned by Scottish and Newcastle Breweries when they produced the Mackinlay blended Scotches, in which it is an important component.

The very soft water flows primarily over rock, even passing through a cave.  The densely wooded hillsides are places carpeted with bluebells, pimpernels, and wild garlic.  Lightly peated malt, mainly from Port Ellen, is used at the distillery, and the stills have very high necks.  As these produce a light spirit, first-fill Bourbon or sherry casks could mask the natural flavors of the whisky.  There is a very small proportion (less than ten per cent) of second-fill sherry.
