HIGHLAND PARK DISTILLERY

The greatest all-rounder in the world of malt whisky.  Definitely in an island style, but combining all the elements of a classic single malt: smokiness (with its own heather-honey accent); maltiness; smoothness; roundness and fullness of flavor; and length of finish – lovely any time.  As a single malt, Highland Park develops to great ages.  The distillery is now beginning to make available some older examples, which have considerable depth and richness.

Highland Park, the northernmost of Scotland’s distilleries, dates from at least 1798.  Most of today’s buildings, in local Walliwall stone (flecked with yellow and red), and its gilded-iron gateway, have an 1890s’ look that is slightly incongruous in rural Orkney.  The distillery is on the edge of Kirkwall, the islands’ capital.  Some experts believe that Highland Park’s water falls as rain on the Scottish mainland, and seeps under the sea.  It rises from Walliwall stone.  Highland Park has its own floor maltings, using peat dug locally, from shallow beds that provide a “young”, rooty, heathery character.

Smoky and full-flavored.  At 18 or 25 years old, with dessert or a cigar.  The yet older vintages with a book at bedtime.
